Description

This No-Bake Toffee Pudding Slice is a decadent British-inspired dessert featuring a buttery biscuit base topped with a rich, creamy caramel toffee filling. Easily prepared without the oven, this slice combines the satisfying crunch of crushed digestive biscuits with a luscious toffee layer, finished with optional whipped cream or chocolate shavings for extra indulgence. Perfect for parties or as a sweet treat anytime, it sets in the fridge for a foolproof no-bake delight.

Ingredients

Biscuit Base

  • 200g digestive biscuits (or graham crackers), crushed
  • 100g unsalted butter, melted

Toffee Filling

  • 1/2 cup sweetened condensed milk
  • 1/3 cup brown sugar
  • 2 tablespoons golden syrup or corn syrup
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup toffee bits or chopped soft caramels

Topping (Optional)

  • Whipped cream or chocolate shavings

Instructions

  1. Prepare the Biscuit Base: Line an 8×8-inch baking pan with parchment paper. In a bowl, mix the crushed digestive biscuits with the melted butter until the mixture is evenly combined. Press this mixture firmly and evenly into the bottom of the prepared pan to create a solid base. Place the pan in the refrigerator to chill while you prepare the filling.
  2. Make the Toffee Filling: In a medium saucepan over medium heat, combine sweetened condensed milk, brown sugar, and golden syrup. Stir continuously to prevent burning and cook until the mixture thickens and turns a light caramel color, approximately 5 to 7 minutes. Remove from heat promptly to avoid overcooking.
  3. Finish the Filling and Assemble: Stir in the heavy cream and vanilla extract into the caramel mixture to enrich and smooth it. Allow the filling to cool slightly to prevent melting the biscuit base. Pour the caramel filling evenly over the chilled biscuit base and smooth the surface. Sprinkle the top with toffee bits or chopped soft caramels for added texture and flavor.
  4. Chill and Serve: Refrigerate the slice for at least 3 hours or until fully set. Once set, remove from the pan using the parchment paper and slice into 16 squares. Optionally, garnish each slice with whipped cream or chocolate shavings before serving.

Notes

  • Store the slice in the refrigerator for up to 5 days to maintain freshness.
  • For a firmer texture that slices more cleanly, freeze the dessert for 20 minutes before cutting.
  • Use golden syrup for a more authentic British flavor, but corn syrup works as an alternative.
  • Ensure constant stirring during caramel cooking to prevent burning and achieve a smooth texture.
