Ingredients
Crust
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Strawberry Jello Layer
- 1 package (3 oz) strawberry Jello
- 1 cup boiling water
- 1/2 cup cold water
- 1 lb fresh strawberries, sliced
Cream Cheese Layer
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container (8 oz) whipped topping (such as Cool Whip), divided

- Additional whipped topping
- Fresh strawberries
Instructions
- Prepare the Crust: In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer. Place the crust in the refrigerator to chill while you prepare the other layers.
- Make the Strawberry Jello: In a large bowl, dissolve the strawberry Jello powder in 1 cup of boiling water, stirring until completely dissolved. Add 1/2 cup cold water and stir. Refrigerate for 45–60 minutes until the mixture begins to thicken but is not fully set.
- Prepare the Cream Cheese Mixture: In a separate bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, beating until creamy and well combined. Gently fold in half of the whipped topping until the mixture is smooth and fluffy.
- Assemble the Layers: Spread the cream cheese mixture evenly over the chilled graham cracker crust. Arrange a layer of sliced fresh strawberries over the cream cheese layer.
- Add the Jello Layer: Once the Jello has thickened but is not fully set, gently pour or spoon it over the strawberry layer, spreading it evenly without disturbing the layers beneath.
- Chill to Set: Refrigerate the assembled dessert for at least 4 hours to allow the layers to fully set and meld together.
- Garnish and Serve: Before serving, spread the remaining whipped topping over the top and garnish with extra fresh strawberries, if desired. Cut into squares and serve chilled.

- This dessert can be prepared a day ahead for added convenience.
- For a different crust flavor, substitute graham crackers with vanilla wafers or crushed Golden Oreos.
