Ingredients
For the Crust:
- 2 cups golden Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
For the Filling:
- 2 cups fresh strawberries, chopped
- 1 tablespoon sugar
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 1 cup freeze-dried strawberries, crushed
- 1/2 cup additional crushed golden Oreos for topping
Instructions
- Prepare the Crust: Mix the crushed golden Oreos with melted butter. Press into the bottom of a 9-inch springform pan and chill.
- Prepare the Filling: Mash strawberries with sugar. Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream and fold into the cream cheese mixture. Fold in mashed strawberries.
- Assemble the Cheesecake: Spread the filling over the crust. Mix crushed freeze-dried strawberries and crushed Oreos, then sprinkle over the top.
- Chill: Refrigerate for at least 6 hours or overnight.
- Serve: Remove from the pan and serve chilled.
