Description

Indulge in the delightful flavors of summer with this easy No-Bake Strawberry Crunch Cheesecake. A luscious cream cheese filling studded with fresh strawberries sits atop a golden Oreo crust, all topped with a crunchy strawberry and Oreo crumble. Perfect for any occasion!

Ingredients

For the Crust:

  • 2 cups golden Oreo cookies, crushed
  • 1/4 cup unsalted butter, melted

For the Filling:

  • 2 cups fresh strawberries, chopped
  • 1 tablespoon sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup additional crushed golden Oreos for topping

Instructions

  1. Prepare the Crust: Mix the crushed golden Oreos with melted butter. Press into the bottom of a 9-inch springform pan and chill.
  2. Prepare the Filling: Mash strawberries with sugar. Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream and fold into the cream cheese mixture. Fold in mashed strawberries.
  3. Assemble the Cheesecake: Spread the filling over the crust. Mix crushed freeze-dried strawberries and crushed Oreos, then sprinkle over the top.
  4. Chill: Refrigerate for at least 6 hours or overnight.
  5. Serve: Remove from the pan and serve chilled.

Notes

  • For extra strawberry flavor, stir in a spoonful of strawberry jam.
  • This cheesecake can be made a day ahead and stored in the fridge.
  • Use stabilized whipped cream for a firmer texture.
