Ingredients
For the Crust:
- 2 cups Golden Oreos or vanilla sandwich cookies (crushed)
- ¼ cup unsalted butter (melted)
For the Filling:
- 16 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups whipped topping or whipped cream
- 1 cup fresh strawberries (finely diced)
For the Strawberry Crunch Topping:
- 1 cup Golden Oreos (crushed)
- 2 tbsp strawberry gelatin powder (dry)
- 2 tbsp unsalted butter (melted)
Instructions
- Prepare the Crust: In a medium bowl, mix crushed Golden Oreos with melted butter until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
- Make the Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, and mix until fully combined. Gently fold in the whipped topping and diced strawberries until light and fluffy. Spread the filling over the prepared crust and smooth the top.
- Create the Crunch Topping: Mix crushed Golden Oreos with dry strawberry gelatin powder and melted butter in a small bowl until crumbly. Sprinkle the topping evenly over the cheesecake.
- Chill and Serve: Cover and refrigerate for at least 4 hours or overnight until set. Slice and serve chilled.
Notes
- For extra flavor, add a layer of strawberry jam between the crust and filling.
