Instructions
- Prepare the Cookie Crumbs: In a food processor, pulse the vanilla wafers into fine crumbs. Transfer the crumbs to a large mixing bowl.
- Make the Truffle Dough: Add the softened cream cheese, unsalted butter, orange juice, orange zest, vanilla extract, salt, and 1 cup of the powdered sugar to the cookie crumbs. Mix thoroughly until a smooth, soft dough forms. If the mixture feels too sticky, gradually add the remaining powdered sugar, one tablespoon at a time, until it’s manageable by hand.
- Shape and Chill: Roll the dough into approximately 1-inch balls and place them on a parchment-lined baking sheet. Freeze the truffles for 20 to 30 minutes to firm up.
- Melt the White Chocolate: While the truffles chill, melt the white chocolate chips in a microwave-safe bowl by heating in 30-second intervals, stirring in between, until completely smooth.
