Ingredients
Dry Ingredients
- 1 cup old-fashioned oats
- 2/3 cup toasted shredded coconut (sweetened or unsweetened)
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
- 1 tablespoon chia seeds (optional)
Wet Ingredients
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
Instructions
- Combine Ingredients: Stir all ingredients together in a large mixing bowl until thoroughly combined, ensuring an even distribution of oats, peanut butter, honey, and mix-ins.
- Chill the Mixture: Cover the mixing bowl and refrigerate for 1-2 hours. Chilling helps the mixture firm up, making it easier to handle and roll into balls.
- Roll into Balls: Once chilled, scoop the mixture and roll it into 1-inch sized balls using your hands for uniform bite-sized snacks.
- Serve or Store: Enjoy the energy bites immediately, or store them in a sealed container in the refrigerator for up to 1 week, or freeze for up to 3 months for longer storage.
Notes
- You can substitute peanut butter with any other nut or seed butter for variation.
- Using sweetened or unsweetened shredded coconut will affect the sweetness slightly; adjust honey accordingly.
- Optional chia seeds add extra fiber and omega-3s but can be omitted if preferred.
- Energy bites can be customized by adding nuts, dried fruit, or seeds.
- Keep refrigerated to maintain freshness and texture.
