Description

These No Bake Energy Bites are a quick and easy snack packed with oats, peanut butter, and chocolate chips, offering a perfect balance of protein, fiber, and sweetness without any need for cooking. Ideal for a healthy energy boost, they’re ready in just 20 minutes, with no baking required.

Ingredients

Dry Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup toasted shredded coconut (sweetened or unsweetened)
  • 1/2 cup ground flaxseed
  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
  • 1 tablespoon chia seeds (optional)

Wet Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Combine Ingredients: Stir all ingredients together in a large mixing bowl until thoroughly combined, ensuring an even distribution of oats, peanut butter, honey, and mix-ins.
  2. Chill the Mixture: Cover the mixing bowl and refrigerate for 1-2 hours. Chilling helps the mixture firm up, making it easier to handle and roll into balls.
  3. Roll into Balls: Once chilled, scoop the mixture and roll it into 1-inch sized balls using your hands for uniform bite-sized snacks.
  4. Serve or Store: Enjoy the energy bites immediately, or store them in a sealed container in the refrigerator for up to 1 week, or freeze for up to 3 months for longer storage.

Notes

  • You can substitute peanut butter with any other nut or seed butter for variation.
  • Using sweetened or unsweetened shredded coconut will affect the sweetness slightly; adjust honey accordingly.
  • Optional chia seeds add extra fiber and omega-3s but can be omitted if preferred.
  • Energy bites can be customized by adding nuts, dried fruit, or seeds.
  • Keep refrigerated to maintain freshness and texture.
