Ingredients
Cookie Dough Layer
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Cheesecake Layer
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream or whipped topping
- 1/2 cup mini chocolate chips (for topping)
Instructions
- Prepare the Cookie Dough Layer: In a mixing bowl, cream together the softened unsalted butter, brown sugar, granulated sugar, milk, and vanilla extract until the mixture is smooth and creamy.
- Add Dry Ingredients: Gradually incorporate the all-purpose flour and salt into the wet mixture, mixing until a smooth, thick cookie dough forms without any lumps.
- Fold in Chocolate Chips and Press: Gently fold in 1/2 cup of mini chocolate chips, then evenly press this cookie dough mixture into the bottom of a baking dish to form the base layer.
- Make the Cheesecake Layer: In a separate bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy, ensuring no lumps remain.
- Fold in Whipped Cream: Carefully fold the whipped cream or whipped topping into the cream cheese mixture until fully combined and fluffy.
- Assemble the Bars: Spread the cheesecake layer evenly over the cookie dough base in the baking dish.
- Add Topping and Chill: Sprinkle the remaining 1/2 cup mini chocolate chips evenly on top of the cheesecake layer. Cover and refrigerate for at least 4 hours, or until firm and set.
Notes
- Use heat-treated flour if you are concerned about consuming raw flour in the cookie dough layer.
- For a richer flavor, use full-fat cream cheese and freshly whipped cream rather than premade topping.
- Allow bars to chill sufficiently to make cutting easier and to hold their shape well.
- Store leftover bars covered in the refrigerator for up to 3 days.
- Feel free to customize by adding nuts or different types of chocolate chips in the dough or topping.
