- Boil: Bring the mixture to a vigorous boil and let it boil for exactly 60 seconds, stirring occasionally to prevent sticking and ensure even heating.
- Remove from heat: Immediately remove the saucepan from heat, then stir in the peanut butter and vanilla extract until smooth and fully blended.
- Add oats: Mix in the rolled or quick oats, stirring well until all oats are fully coated with the chocolate-peanut butter mixture.
- Form cookies: Drop spoonfuls of the mixture onto parchment paper, spacing them apart. Let the cookies cool completely at room temperature so they firm up before serving.
