Ingredients
Quinoa:
- 1 cup uncooked quinoa
- 2 cups water
- 1/4 teaspoon salt
Salad:
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Rinse the quinoa: Under cold water using a fine mesh sieve.
- Cook the quinoa: In a saucepan with water and salt until tender.
- Prepare the salad: Combine quinoa, tomatoes, cucumber, onion, feta, parsley, and mint in a bowl.
- Make the dressing: Whisk together olive oil, lemon juice, vinegar, and garlic.
- Combine: Pour dressing over salad, toss well, season, and chill before serving.
