Description

Ingredients

Pastry

  • 1 sheet puff pastry (thawed)

Filling

  • 2 tablespoons olive oil
  • 2 cups cremini or button mushrooms (sliced)
  • 2 medium shallots (thinly sliced)
  • 2 teaspoons fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces herbed goat cheese (softened)

Finishing

  • 1 egg (beaten, for egg wash)
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Preheat and prepare pastry: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. On a lightly floured surface, roll out the thawed puff pastry and cut it into 4 equal rectangles or your desired tart size. Transfer to the baking sheet and lightly score a ½-inch border around each piece without cutting all the way through.
  2. Sauté shallots: Heat olive oil in a skillet over medium heat. Add the thinly sliced shallots and sauté for 2–3 minutes until softened and fragrant.
  3. Cook mushrooms and season: Add sliced mushrooms, fresh thyme, salt, and black pepper to the skillet. Cook for 6–8 minutes until the mushrooms turn golden and most of their moisture has evaporated. Remove from heat and allow to cool slightly.
  4. Assemble tarts: Spread about 1 tablespoon of softened herbed goat cheese inside the scored border on each puff pastry rectangle. Evenly spoon the mushroom and shallot mixture on top of the goat cheese layer, distributing it equally among the tarts.
  5. Apply egg wash and bake: Brush the edges of the pastry with the beaten egg to ensure a golden finish. Place the baking sheet in the oven and bake for 18–22 minutes or until the pastry is puffed and beautifully golden brown.
  6. Garnish and serve: Remove the tarts from the oven and sprinkle with chopped fresh parsley. Serve warm or at room temperature for best flavor.

  • Prepare the tarts ahead of time and reheat gently before serving for convenience.
  • If you don’t have herbed goat cheese, mix plain goat cheese with fresh chopped herbs as a substitute.
