Description

Ingredients

Sourdough or Rustic Bread:

4 slices

Butter:

1 tablespoon (plus more for grilling)

Yellow Onion:

1 small, thinly sliced

Cremini or Baby Bella Mushrooms:

1 cup, sliced

Thyme:

1/2 teaspoon, fresh or dried

Salt and Black Pepper:

to taste

Gouda Cheese:

4 ounces, sliced or shredded

Dijon Mustard:

1 teaspoon (optional)


Instructions

  1. Caramelize Onions and Mushrooms: Heat butter in a skillet, cook onions until soft, add mushrooms, thyme, salt, and pepper, cook until browned.
  2. Prepare Sandwiches: Butter bread slices, spread mustard on two slices, layer with Gouda, mushroom-onion mixture, more Gouda, and top with bread.
  3. Grill Sandwiches: Heat skillet, grill sandwiches for 3–4 minutes per side until golden brown and cheese is melted. Serve warm.
