Ingredients
For the Filling
- 1 lb mushrooms, sliced
- 2 large onions, thinly sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Sandwich
- 8 slices sourdough bread
- 8 slices Gouda cheese
- 4 tablespoons butter

- Caramelize Onions: In a skillet, heat olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Cook the onions slowly for about 15-20 minutes, stirring occasionally, until they are deeply caramelized and sweet.
- Sauté Mushrooms: Add the sliced mushrooms to the skillet with the onions. Season with salt and pepper, and cook for an additional 10 minutes, stirring occasionally, until the mushrooms are golden brown and all their moisture has evaporated.
- Prepare Bread: Spread butter evenly on one side of each slice of sourdough bread. This will help create a golden crispy crust during grilling.
- Assemble Sandwich: Place a slice of bread, butter-side down, onto a clean skillet heated over medium heat. Layer one slice of Gouda cheese, a generous helping of the mushroom and onion mixture, followed by another slice of Gouda cheese on top of the bread in the skillet.
- Top and Grill: Place another slice of bread on top with the butter-side facing up. Cook until the bread turns golden brown and the cheese starts to melt, about 3-5 minutes, then carefully flip the sandwich to cook the other side until it is also golden and the cheese is fully melted, about another 3-5 minutes.
