Ingredients
Chicken and Seasoning
- 2 tablespoons oil, divided
- 1 lb boneless chicken thighs, cut into 1-inch (2cm) pieces
- ½ teaspoon salt, to taste
- ¼ teaspoon cracked pepper
- 2 teaspoons Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
Vegetables and Aromatics
- 8 ounces sliced brown mushrooms
- 3 tablespoons butter
- 1 tablespoon brown shallot, chopped
- 1 tablespoon green bell pepper, seeded and chopped
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the Chicken: Heat 1 tablespoon of oil in a skillet over medium-high heat.
- Season the Chicken: Add the chicken pieces to the hot oil and season with salt, cracked pepper, Italian seasoning, garlic powder, onion powder, and paprika.
- Sear the Chicken: Mix well to coat the chicken evenly with seasonings, then sear for 5-6 minutes until the chicken is browned and cooked through.
- Set Chicken Aside: Transfer the cooked chicken to a plate, cover to keep warm, and set aside.
- Cook Mushrooms: Add the remaining 1 tablespoon of oil to the skillet, then add the sliced mushrooms. Cook, stirring occasionally, for 3-4 minutes until the mushrooms soften and begin to brown.
- Add Butter and Vegetables: Add the butter to the pan and allow it to melt. Then sauté chopped shallots and green bell peppers until softened and fragrant, about 3 minutes.
- Sauté Garlic: Add minced garlic to the pan and sauté for an additional 30 seconds until fragrant.
- Combine Ingredients: Return the cooked chicken to the pan and mix everything together thoroughly to evenly coat the chicken and vegetables with the pan juices.
- Finish Cooking: Continue cooking for 1-2 minutes until the vegetables are completely soft and the chicken is heated through.
- Adjust Seasonings and Serve: Taste the dish and adjust salt and pepper if needed. Garnish with chopped fresh parsley and serve warm.
