  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 2 large eggs
  • 1 1/2 cups canned pumpkin puree
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Combine the wet ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, oil, milk, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Combine wet and dry mixtures: Gradually stir the dry ingredients into the wet mixture until just combined—do not overmix.
  5. Bake: Pour the batter into the prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
