Description

Mom’s Best Cake is a rich and moist chocolate sheet cake enhanced with a hint of coffee to deepen the chocolate flavor without overpowering the taste. Topped with a creamy, smooth vanilla frosting, this classic American dessert is perfect for family gatherings and easy to prepare with simple ingredients.

Ingredients

Cake

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup cocoa powder, unsweetened
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup hot brewed coffee or hot water

Frosting

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F and grease a 9×13-inch baking pan to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and unsweetened cocoa powder until well combined.
  3. Add Wet Ingredients: Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix thoroughly until the batter is smooth and uniform.
  4. Incorporate Coffee: Slowly stir in the hot brewed coffee or hot water into the batter, which will thin it out and enhance the chocolate flavor.
  5. Bake the Cake: Pour the batter into the prepared baking pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare the Frosting: While the cake is baking, beat the softened butter in a medium bowl until creamy. Gradually add powdered sugar, milk, and vanilla extract and continue beating until the frosting is smooth and spreadable.
  7. Cool and Frost: Allow the cake to cool completely in the pan. Once cooled, spread the frosting evenly over the top of the cake.
  8. Serve: Slice into 12 portions and serve. Store covered at room temperature for up to 2 days or refrigerate for longer freshness.

Notes

  • This cake is very moist and chocolatey.
  • Coffee enhances the chocolate flavor but does not make the cake taste like coffee.
  • Store covered at room temperature for up to 2 days or refrigerate for longer freshness.
