Mom’s Best Cake is a rich and moist chocolate sheet cake enhanced with a hint of coffee to deepen the chocolate flavor without overpowering the taste. Topped with a creamy, smooth vanilla frosting, this classic American dessert is perfect for family gatherings and easy to prepare with simple ingredients.
Ingredients
Cake
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup cocoa powder, unsweetened
- 2 large eggs, room temperature
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup hot brewed coffee or hot water
Frosting
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F and grease a 9×13-inch baking pan to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and unsweetened cocoa powder until well combined.
- Add Wet Ingredients: Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix thoroughly until the batter is smooth and uniform.
- Incorporate Coffee: Slowly stir in the hot brewed coffee or hot water into the batter, which will thin it out and enhance the chocolate flavor.
- Bake the Cake: Pour the batter into the prepared baking pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Frosting: While the cake is baking, beat the softened butter in a medium bowl until creamy. Gradually add powdered sugar, milk, and vanilla extract and continue beating until the frosting is smooth and spreadable.
- Cool and Frost: Allow the cake to cool completely in the pan. Once cooled, spread the frosting evenly over the top of the cake.
- Serve: Slice into 12 portions and serve. Store covered at room temperature for up to 2 days or refrigerate for longer freshness.
Notes
- This cake is very moist and chocolatey.
