Ingredients
Dry Ingredients:
- 1 ¾ cups all-purpose flour
- 1 ½ teaspoons baking soda
- ½ teaspoon baking powder
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
Wet Ingredients:
- 1 ½ cups unsweetened applesauce
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
Optional:
- ½ cup chopped walnuts or pecans
Instructions
- Preheat and Prepare: Preheat the oven to 350°F. Grease a 9×5-inch loaf pan or line with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Combine Wet Ingredients: In another bowl, mix applesauce, granulated sugar, brown sugar, eggs, oil, and vanilla extract.
- Combine Mixtures: Stir wet ingredients into dry until just combined. Fold in nuts if desired.
- Bake: Pour batter into prepared pan, smooth the top, and bake for 50–60 minutes until a toothpick comes out clean.
- Cool and Serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Enhance with ½ cup raisins or dried cranberries.
- Substitute half of the all-purpose flour with whole wheat flour for a heartier bread.
- Freezes well—wrap tightly and store for up to 3 months.
