Ingredients

Oatmeal Mixture

  • 2 cups old-fashioned oats
  • 1½ cups milk (dairy or nut milk)

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or 11×7-inch baking dish and set it aside to prepare for baking.
  2. Combine Ingredients: In a large bowl, thoroughly mix the old-fashioned oats, milk, maple syrup, melted butter, egg, vanilla extract, baking powder, ground cinnamon, and salt until you achieve a uniformly combined mixture.
  3. Add Berries: Gently fold in 1 cup of the mixed berries into the oatmeal mixture, taking care not to crush the berries to keep them intact and distribute evenly.
  4. Transfer to Baking Dish: Pour the prepared oatmeal and berry mixture into the greased baking dish, spreading it evenly to ensure uniform baking. Then sprinkle the remaining ½ cup of mixed berries evenly on top for garnish and added flavor.
  5. Bake: Place the baking dish in the preheated oven and bake for 30 to 40 minutes, or until the center is set and the edges turn lightly golden brown, indicating that it is fully cooked through.
