Description

This Mixed Berry Baked Oatmeal is a wholesome and comforting breakfast dish loaded with nutrient-rich oats and vibrant mixed berries. Perfectly sweetened with maple syrup, lightly spiced with cinnamon, and baked to golden perfection, it offers a warm, hearty start to your day that can be easily tailored to dietary preferences by choosing your preferred milk and fat.

Ingredients

Oatmeal Base

  • 2 cups old-fashioned oats
  • 1½ cups milk (dairy or nut milk)
  • â…“ cup pure maple syrup or brown sugar
  • 2 tablespoons melted butter or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Fruit

  • 1½ cups mixed berries (fresh or frozen; strawberries, raspberries, blueberries)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or 11×7-inch baking dish and set aside.
  2. Combine Ingredients: In a large bowl, mix together oats, milk, maple syrup, melted butter, egg, vanilla extract, baking powder, cinnamon, and salt until well combined.
  3. Add Berries: Gently fold in 1 cup of mixed berries into the oatmeal mixture, being careful not to crush them.
  4. Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of berries on top.
  5. Bake: Place in the preheated oven and bake for 30-40 minutes or until the center is set and edges are lightly golden.
  6. Serve: Remove from the oven and allow to cool for about 5 minutes before serving. Optionally, drizzle with more maple syrup or a splash of milk.

Notes

  • You can substitute any type of milk you prefer, such as almond, soy, or oat milk, to make this recipe dairy-free.
  • Fresh or frozen berries can be used; if using frozen, do not thaw before adding to avoid excess moisture.
  • For a vegan variation, replace the egg with a flax egg and use coconut oil or vegan butter.
  • Leftovers can be refrigerated for up to 4 days and reheated gently before serving.
  • Adding nuts like walnuts or pecans can add crunch and extra nutrition.
