Ingredients

Cheesecake Base:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

Topping and Garnish:

  • 1 cup strawberry topping or strawberry preserves
  • Fresh strawberries for garnish (optional)

Instructions

  1. Preheat the oven: Preheat oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare the crust: Mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press mixture into each liner to form a base.
  3. Make the filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla extract, and sour cream. Mix until combined.
  4. Fill and bake: Divide filling among crusts and bake for 18–20 minutes until set. Cool in oven with door cracked, then refrigerate for 2 hours.
  5. Top and garnish: Before serving, add strawberry topping to each cheesecake and garnish with a fresh strawberry.
