Description

Mini Reuben Bites are delicious, bite-sized appetizers featuring rye bread topped with a savory mixture of corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing. Baked until bubbly and golden, these easy-to-make snacks are perfect for parties and gatherings.

Ingredients

Mini Reuben Bites

  • 12 mini rye bread slices or cocktail rye
  • 1/2 lb sliced corned beef, chopped
  • 1/2 cup sauerkraut, drained and patted dry
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup Thousand Island dressing
  • 1 tablespoon butter, melted
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for toasting the bread slices.
  2. Toast Bread: Arrange the mini rye slices on the baking sheet and lightly brush each with the melted butter. Bake for 5 to 7 minutes until they are slightly toasted and golden.
  3. Prepare Topping: In a small bowl, mix together the chopped corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing until well combined.
  4. Assemble Bites: Evenly spoon the meat and cheese mixture onto each toasted bread slice, creating a generous topping for each bite.
  5. Bake Again: Return the assembled bites to the oven and bake for another 8 to 10 minutes, or until the cheese has melted and is bubbly and slightly golden on top.
  6. Serve: Remove the bites from the oven and let them cool slightly so they are warm but not too hot. Garnish with chopped fresh parsley if desired and serve immediately.

Notes

  • These bites can be made ahead of time and reheated in the oven before serving to save time.
  • Experiment with mini phyllo cups or toasted baguette slices instead of rye bread for a fun variation.
