- 12 mini rye bread slices or cocktail rye
- 1/2 lb sliced corned beef, chopped
- 1/2 cup sauerkraut, drained and patted dry
- 1/2 cup shredded Swiss cheese
- 1/4 cup Thousand Island dressing
- 1 tablespoon butter, melted
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for toasting the bread slices.
- Toast Bread: Arrange the mini rye slices on the baking sheet and lightly brush each with the melted butter. Bake for 5 to 7 minutes until they are slightly toasted and golden.
- Prepare Topping: In a small bowl, mix together the chopped corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing until well combined.
- Assemble Bites: Evenly spoon the meat and cheese mixture onto each toasted bread slice, creating a generous topping for each bite.
- Bake Again: Return the assembled bites to the oven and bake for another 8 to 10 minutes, or until the cheese has melted and is bubbly and slightly golden on top.
- Serve: Remove the bites from the oven and let them cool slightly so they are warm but not too hot. Garnish with chopped fresh parsley if desired and serve immediately.
