Ingredients
Crust
- 1 package refrigerated pie crusts (or homemade pie dough)
Filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Topping
- 1 can peach slices in syrup, drained (or fresh peaches, sliced)
- 1 tablespoon peach preserves or apricot jam (optional, for glazing)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the tart crusts.
- Prepare crusts: Roll out the pie crusts and cut into circles sized to fit mini tart pans or a muffin tin.
- Bake the tart shells: Press the dough circles into the prepared pans, then bake for 10-12 minutes or until golden brown and cooked through.
- Make the cream cheese filling: While the shells cool, beat together softened cream cheese, powdered sugar, vanilla extract, and ground cinnamon until the mixture is smooth and creamy.
- Fill tart shells: Once the crusts have cooled, spoon the cream cheese mixture evenly into each shell.
- Add peach topping: Arrange peach slices, fresh or drained canned, on top of the cream cheese filling.
- Glaze the tarts (optional): Warm the peach preserves or apricot jam briefly in the microwave and lightly drizzle over the peaches to achieve a beautiful glossy finish.
- Chill before serving: Refrigerate the tarts for at least 1 hour to allow the flavors to meld and the filling to set properly.
Notes
- Use fresh peaches when in season for a fresher taste and texture.
- The peach preserves glaze is optional but adds a lovely shine and subtle additional flavor.
- These tarts can be made ahead and stored in the refrigerator for up to 2 days.
- For a nutty twist, sprinkle chopped toasted almonds over the peaches before glazing.
- Ensure cream cheese is softened to avoid lumps in the filling.
