Ingredients
Filling
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 4-6 strips bacon, cooked and chopped
- 3-5 jalapenos, seeded and diced
- 2 green onions, finely sliced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For Assembly
- Wonton wrappers (around 22)
- Vegetable oil, for frying
Instructions
- Prepare the filling: In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped bacon, diced jalapenos, sliced green onions, garlic powder, salt, and pepper. Mix until well combined to create a flavorful filling.
- Fill the wonton wrappers: Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the cream cheese mixture onto the center of the wrapper, being careful not to overfill.
- Wrap the egg rolls: Moisten the edges of the wrapper with water. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly like a burrito, sealing the edges with water to ensure they do not open during frying.
- Repeat wrapping: Repeat the filling and wrapping process with the remaining wrappers and filling until all egg rolls are assembled.
- Heat the oil: Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C), ensuring there is enough oil to submerge the egg rolls for even cooking.
- Fry the egg rolls: Fry the egg rolls in batches for about 2-3 minutes each, turning occasionally, until they are golden brown and crispy on all sides. Remove them carefully and drain on paper towels to remove excess oil.
- Serve: Serve the mini jalapeno popper egg rolls hot with your favorite dipping sauce such as ranch dressing or sweet chili sauce for maximum flavor and enjoyment.
Notes
- Make sure the jalapenos are seeded if you want to reduce the heat level.
- Ensure the edges of the wonton wrappers are sealed tightly to prevent filling leakage during frying.
- You can prepare the filling ahead of time and refrigerate before assembling the egg rolls.
- For a lighter option, try baking the egg rolls at 400°F for 15-20 minutes until crispy.
- Be cautious when frying as the oil will be very hot; use tongs or a slotted spoon for safety.
