Description

Mini Chicken Fajita Wonton Cups are a delightful appetizer or party snack featuring crispy wonton wrappers filled with a flavorful mixture of seasoned chicken, sautéed onions, and bell peppers, topped with melted cheese and a dollop of creamy sour cream or Greek yogurt. These bite-sized treats combine the zesty spices of fajitas with the crunch of baked wonton cups, perfect for entertaining or a fun family meal.

Ingredients

Wonton Cups

  • 1 package (12 ounces) wonton wrappers

Chicken Fajita Filling

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper (red or green), thinly sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Toppings

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for garnish)
  • Slices of jalapeño (optional, for extra heat)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the wonton cups.
  2. Prepare Wonton Cups: Lightly grease a mini muffin tin. Press each wonton wrapper into the muffin cups, shaping them to fit snugly. Use a small cup if needed to mold them properly. Bake the wonton wrappers for 8-10 minutes until golden and crispy. Remove from oven and set aside to cool slightly.
  3. Cook Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked through.
  4. Sauté Vegetables: Add the thinly sliced onion and bell pepper to the skillet with the chicken. Cook for another 5 minutes until the vegetables are tender and slightly caramelized.
  5. Fill Wonton Cups: Once the wonton cups have cooled slightly, spoon the chicken and vegetable mixture evenly into each cup. Top each filled cup with a generous sprinkle of shredded cheese.
  6. Melt Cheese: Return the filled wonton cups to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove the wonton cups from the oven and allow them to cool for a minute. Top each cup with a dollop of sour cream or Greek yogurt, sprinkle with fresh chopped cilantro, and add jalapeño slices if desired. Serve warm and enjoy!

Notes

  • You can substitute chicken breasts with chicken thighs for a juicier texture.
  • Use green, red, or yellow bell peppers based on your color preference.
  • For a spicier kick, add extra chili powder or jalapeño slices inside the filling.
  • These can be made ahead and reheated in the oven to maintain crispiness.
  • For a vegetarian version, substitute chicken with black beans or sautéed mushrooms.
