Description
These Mini Cheese Ball Bites are a perfect party appetizer or bite-sized snack that require no baking. Creamy and flavorful cheese balls rolled in a crunchy pecan-parsley coating and served with a pretzel stick for easy handling.
Ingredients
Cheese Balls:
- 2 (8 oz) packages cream cheese, softened
 - 1 cup shredded sharp cheddar cheese
 - ½ cup shredded Monterey Jack cheese
 - 1 tablespoon ranch seasoning mix
 - 1 teaspoon garlic powder
 - ½ teaspoon black pepper
 - ¼ cup chopped green onions
 
Coating:
- ¾ cup finely chopped pecans
 - ¼ cup chopped fresh parsley
 
For Serving:
- pretzel sticks
 
Instructions
- Cheese Ball Mixture: In a large mixing bowl, combine cream cheese, cheddar, Monterey Jack, ranch seasoning, garlic powder, black pepper, and green onions. Mix until fully combined and smooth.
 - Chill: Cover and chill the mixture for 30–60 minutes to firm up. Meanwhile, mix chopped pecans and parsley together on a plate.
 - Form Balls: Once chilled, scoop out tablespoon-sized portions of the cheese mixture and roll into balls. Roll each ball in the pecan-parsley coating until fully covered.
 - Serve: Insert a pretzel stick into the center of each cheese ball just before serving. Arrange on a platter and serve chilled.
 
Notes
- You can switch up the coating with crushed bacon, crushed crackers, or everything bagel seasoning for variety.
 - Make ahead and store in the fridge for up to 3 days (insert pretzel sticks just before serving to avoid sogginess).
