  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil

Spice Mix:

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  3. Roast Potatoes: Spread the potatoes on the baking sheet and roast for 30-35 minutes, flipping halfway through.
