This Mexican Fiesta Casserole is a delicious and easy-to-make dish that combines all the flavors of a fiesta in one hearty casserole. Packed with seasoned ground beef or turkey, black beans, corn, rice, and gooey melted cheese, this recipe is a sure crowd-pleaser.
Ingredients
Ground Beef or Turkey Mixture:
- 1 lb ground beef or ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1/2 cup salsa
- 2 cups cooked rice or cooked quinoa
Cheese Topping:
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the Meat: In a large skillet, heat olive oil, cook onion, garlic, and meat until browned. Add taco seasoning, black beans, corn, tomatoes, and salsa. Stir in cooked rice.
- Assemble and Bake: Spread the mixture in the baking dish, top with cheeses, and bake for 20–25 minutes until bubbly.
- Serve: Garnish with cilantro and serve warm with desired toppings.
Notes
- Serve with sour cream, avocado slices, or tortilla chips on the side.
- You can substitute cauliflower rice for a low-carb version.
