Description

This Mexican Fiesta Casserole is a delicious and easy-to-make dish that combines all the flavors of a fiesta in one hearty casserole. Packed with seasoned ground beef or turkey, black beans, corn, rice, and gooey melted cheese, this recipe is a sure crowd-pleaser.


Ingredients

Ground Beef or Turkey Mixture:

  • 1 lb ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1/2 cup salsa
  • 2 cups cooked rice or cooked quinoa

Cheese Topping:

  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Meat: In a large skillet, heat olive oil, cook onion, garlic, and meat until browned. Add taco seasoning, black beans, corn, tomatoes, and salsa. Stir in cooked rice.
  3. Assemble and Bake: Spread the mixture in the baking dish, top with cheeses, and bake for 20–25 minutes until bubbly.
  4. Serve: Garnish with cilantro and serve warm with desired toppings.

Notes

  • Serve with sour cream, avocado slices, or tortilla chips on the side.
  • You can substitute cauliflower rice for a low-carb version.
