Description

Ingredients

Sweet Potatoes:

  • 2 pounds sweet potatoes (peeled and cut into 1-inch thick rounds)

Seasonings:

  • 4 tablespoons unsalted butter (melted)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme

Additional:

  • 1 cup low-sodium chicken broth
  • 2 garlic cloves (smashed)
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Coat Sweet Potatoes: Toss sweet potato rounds with melted butter, olive oil, salt, pepper, garlic powder, and thyme in a large bowl.
  3. Roast: Arrange sweet potatoes on a baking sheet and roast for 15 minutes. Flip and roast for another 15 minutes.
  4. Add Broth: Pour chicken broth and smashed garlic over the sweet potatoes. Roast for an additional 10–15 minutes.
  5. Serve: Spoon pan juices over sweet potatoes before serving. Garnish with parsley if desired.
