Description

These Mediterranean Quesadillas combine fresh baby spinach, tangy feta, and creamy mozzarella with sautéed red onions and aromatic oregano for a deliciously crispy and flavorful meal ready in under 30 minutes.


Ingredients

Quesadillas

  • 2 large flour tortillas
  • 1 cup fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 small red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Pinch salt
  • Pinch black pepper


Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium heat to prepare for sautéing the aromatics.
  2. Sauté garlic and onions: Add minced garlic and thinly sliced red onion to the skillet and cook until the onion is soft and translucent, about 3 minutes.
  3. Cook spinach and season: Stir in fresh baby spinach, dried oregano, salt, and black pepper, cooking until the spinach wilts, approximately 2 minutes. Remove this mixture from the skillet and set aside.
  4. Clean the skillet: Wipe the skillet clean to prevent burning and return it to medium heat.
  5. Assemble quesadilla base: Place one flour tortilla in the skillet and evenly sprinkle half of the mozzarella and feta cheeses over it.
  6. Add filling and top cheese: Spread the spinach and onion mixture evenly over the cheese, then sprinkle the remaining mozzarella and feta on top. Cover with the second tortilla.
  7. Cook first side: Cook until the bottom tortilla turns golden brown and crispy, about 2 to 3 minutes. Carefully flip the quesadilla to cook the other side, ensuring it also turns golden and the cheese melts completely.
  8. Rest and slice: Transfer the cooked quesadilla to a cutting board, let it rest for a minute to set, then slice into wedges and serve warm.
