Description
These Mediterranean Quesadillas combine fresh baby spinach, tangy feta, and creamy mozzarella with sautéed red onions and aromatic oregano for a deliciously crispy and flavorful meal ready in under 30 minutes.
Ingredients
Quesadillas
- 2 large flour tortillas
- 1 cup fresh baby spinach
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1 small red onion, thinly sliced
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Pinch salt
- Pinch black pepper
Instructions
- Heat the skillet: Heat olive oil in a large skillet over medium heat to prepare for sautéing the aromatics.
- Sauté garlic and onions: Add minced garlic and thinly sliced red onion to the skillet and cook until the onion is soft and translucent, about 3 minutes.
- Cook spinach and season: Stir in fresh baby spinach, dried oregano, salt, and black pepper, cooking until the spinach wilts, approximately 2 minutes. Remove this mixture from the skillet and set aside.
- Clean the skillet: Wipe the skillet clean to prevent burning and return it to medium heat.
- Assemble quesadilla base: Place one flour tortilla in the skillet and evenly sprinkle half of the mozzarella and feta cheeses over it.
- Add filling and top cheese: Spread the spinach and onion mixture evenly over the cheese, then sprinkle the remaining mozzarella and feta on top. Cover with the second tortilla.
- Cook first side: Cook until the bottom tortilla turns golden brown and crispy, about 2 to 3 minutes. Carefully flip the quesadilla to cook the other side, ensuring it also turns golden and the cheese melts completely.
- Rest and slice: Transfer the cooked quesadilla to a cutting board, let it rest for a minute to set, then slice into wedges and serve warm.
Notes
- You can substitute flour tortillas with whole wheat or gluten-free options for dietary preferences.
- Adding a dash of lemon juice to the spinach mixture can enhance freshness.
- Serve with a side of Greek yogurt or tzatziki for an extra Mediterranean touch.
- To make this vegetarian, ensure the cheese used does not contain animal rennet.
