Instructions
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the thinly sliced red onion and minced garlic, sautéing until softened and fragrant. Then, add the roughly chopped fresh spinach and cook until it wilts. Season the mixture with salt, pepper, and dried oregano for a Mediterranean flavor base.
- Assemble Quesadilla: In the same skillet, lay one whole wheat tortilla flat. Sprinkle half of the shredded mozzarella evenly over the tortilla, then evenly distribute the sautéed spinach-onion mixture on top, followed by the crumbled feta cheese. Finish by sprinkling the remaining mozzarella cheese on top, then place a second tortilla over the filling to form a sandwich.
