Ingredients
Ground Beef Stir Fry:
- 1 tablespoon olive oil
- 1 pound ground beef (85% lean)
- 1 small red onion (diced)
- 2 cloves garlic (minced)
- 1 zucchini (diced)
- 1 red bell pepper (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup Kalamata olives (sliced)
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper to taste
- 2 tablespoons fresh parsley (chopped)
- 1/4 cup crumbled feta cheese (optional)
- Juice of 1/2 lemon
Instructions
- Heat olive oil: In a large skillet over medium-high heat, add olive oil.
- Cook ground beef: Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Add vegetables: Add red onion and garlic, sauté until softened. Stir in zucchini, red bell pepper, cherry tomatoes, and Kalamata olives.
- Season and cook: Add oregano, cumin, red pepper flakes, salt, and pepper. Cook until vegetables are tender.
- Finish and serve: Remove from heat, squeeze lemon juice, sprinkle with parsley and feta. Serve warm.
