Description

This Mediterranean Ground Beef Stir Fry is a flavorful and satisfying dish that comes together quickly on the stovetop. Packed with fresh vegetables, aromatic herbs, and tangy olives, this gluten-free meal is perfect for a busy weeknight dinner.


Ingredients

Ground Beef Stir Fry:

  • 1 tablespoon olive oil
  • 1 pound ground beef (85% lean)
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • 1 zucchini (diced)
  • 1 red bell pepper (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup Kalamata olives (sliced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 cup crumbled feta cheese (optional)
  • Juice of 1/2 lemon


Instructions

  1. Heat olive oil: In a large skillet over medium-high heat, add olive oil.
  2. Cook ground beef: Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  3. Add vegetables: Add red onion and garlic, sauté until softened. Stir in zucchini, red bell pepper, cherry tomatoes, and Kalamata olives.
  4. Season and cook: Add oregano, cumin, red pepper flakes, salt, and pepper. Cook until vegetables are tender.
  5. Finish and serve: Remove from heat, squeeze lemon juice, sprinkle with parsley and feta. Serve warm.
