Description

These Mediterranean chicken patties are bursting with flavor from feta cheese, sun-dried tomatoes, and fresh herbs. Juicy and savory, they are perfect for a quick and delicious meal.


Ingredients

For the Chicken Patties:

  • 1 pound ground chicken
  • 1/4 cup finely chopped red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped sun-dried tomatoes (oil-packed, drained)
  • 1 clove garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)


Instructions

  1. In a large bowl, combine ground chicken, red onion, feta cheese, parsley, sun-dried tomatoes, garlic, oregano, salt, and pepper. Mix until just combined—do not overwork the meat.
  2. Divide the mixture into 4 equal portions and shape into patties about 1/2 inch thick.
  3. Heat olive oil in a large skillet over medium heat. Add the patties and cook for 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove from heat and let rest for a few minutes before serving.

Notes

  • Serve with tzatziki sauce, on a pita or bun, or over a salad.
  • You can make the patties ahead and refrigerate for up to 24 hours before cooking.
