Description

This Mediterranean Chicken & Rice Skillet is a flavorful one-pan meal that combines tender chicken, savory rice, and vibrant Mediterranean ingredients for a satisfying dinner option.


Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Rice:

  • 1 cup uncooked long grain white rice or jasmine rice
  • 2 1/4 cups low-sodium chicken broth

Additional Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional for garnish)


Instructions
