Ingredients
Chicken Marinade
- 1 lb chicken breasts (about 2 large breasts)
- 1/2 cup Greek dressing
Rice
- 2 bags Success Boil-in-Bag White Rice (or 2 heaping cups cooked white rice)
Toppings
- 1 (15.5 oz) can chickpeas, drained and rinsed
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- 1/4 cup hummus
Instructions
- Marinate the Chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Use your hands or a utensil to coat both sides of the chicken breasts evenly with the dressing. Cover and refrigerate for at least 1 hour to allow the flavors to infuse.
- Cook the Rice: Prepare the Success Boil-in-Bag White Rice according to the package instructions. If using cooked rice, ensure it’s ready and warm for serving.
- Cook the Chicken: Preheat your air fryer to 400°F. Place the marinated chicken breasts in the air fryer basket and cook for 12-15 minutes until fully cooked through and juices run clear. Alternatively, bake the chicken in a preheated 400°F oven for about 20 minutes until cooked through.
- Assemble the Bowls: Divide the cooked rice evenly into 4 serving bowls. Top each bowl with slices of the cooked chicken, chickpeas, chopped cucumber, grape tomatoes, sliced red onion, crumbled feta cheese, a dollop of hummus, and tzatziki. Drizzle extra Greek dressing on top if desired for added flavor.
- Serve and Enjoy: Serve the Mediterranean chicken and rice bowls immediately while warm. Enjoy this fresh, healthy, and satisfying meal!
Notes
- You can prepare the chicken up to 8 hours in advance to save time.

- Use low-fat or dairy-free tzatziki and feta for a lighter version.
- Leftover bowls can be stored in airtight containers in the refrigerator for up to 3 days.
- Adding fresh herbs like parsley or mint will enhance the Mediterranean flavors.
