A delicious and nutritious Mediterranean bowl featuring flavorful ground turkey meatballs, fresh veggies, and creamy tzatziki sauce. This meal is perfect for a satisfying lunch or dinner option.
Ingredients
For the turkey meatballs:
- 1 lb ground turkey
- ¼ cup breadcrumbs
- 1 egg
- 2 tablespoons chopped parsley
- 1 tablespoon minced red onion
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the bowls:
- 2 cups cooked quinoa or couscous
- 1 cup chopped cucumber
- 1 cup cherry tomatoes (halved)
- ½ cup Kalamata olives (pitted and halved)
- ½ cup crumbled feta cheese
- 1 avocado (sliced)
- ½ cup hummus
For the tzatziki sauce:
- ½ cup Greek yogurt
- ¼ cup grated cucumber (squeezed dry)
- 1 tablespoon lemon juice
- 1 garlic clove (minced)
- 1 tablespoon chopped dill
- Salt and pepper to taste
Instructions
- Preheat oven and prepare meatballs: Preheat oven to 400°F (200°C). Mix turkey, breadcrumbs, egg, parsley, red onion, garlic, oregano, cumin, salt, and pepper. Form into meatballs and bake for 18–20 minutes.
- Make tzatziki sauce: Combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Chill until ready to use.
- Assemble the bowls: Divide quinoa/couscous between bowls. Top with meatballs, cucumber, tomatoes, olives, feta, avocado, and hummus. Drizzle with tzatziki sauce before serving.
