Description

A delicious and nutritious Mediterranean bowl featuring flavorful ground turkey meatballs, fresh veggies, and creamy tzatziki sauce. This meal is perfect for a satisfying lunch or dinner option.


Ingredients

For the turkey meatballs:

  • 1 lb ground turkey
  • ¼ cup breadcrumbs
  • 1 egg
  • 2 tablespoons chopped parsley
  • 1 tablespoon minced red onion
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the bowls:

  • 2 cups cooked quinoa or couscous
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes (halved)
  • ½ cup Kalamata olives (pitted and halved)
  • ½ cup crumbled feta cheese
  • 1 avocado (sliced)
  • ½ cup hummus

For the tzatziki sauce:

  • ½ cup Greek yogurt
  • ¼ cup grated cucumber (squeezed dry)
  • 1 tablespoon lemon juice
  • 1 garlic clove (minced)
  • 1 tablespoon chopped dill
  • Salt and pepper to taste

Instructions

  1. Preheat oven and prepare meatballs: Preheat oven to 400°F (200°C). Mix turkey, breadcrumbs, egg, parsley, red onion, garlic, oregano, cumin, salt, and pepper. Form into meatballs and bake for 18–20 minutes.
  2. Make tzatziki sauce: Combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Chill until ready to use.
  3. Assemble the bowls: Divide quinoa/couscous between bowls. Top with meatballs, cucumber, tomatoes, olives, feta, avocado, and hummus. Drizzle with tzatziki sauce before serving.
