Description

These Mediterranean Beef Kabobs are bursting with flavor and perfect for a summer grilling session. Tender beef marinated in a blend of olive oil, herbs, and spices, threaded onto skewers with colorful bell peppers and onions, then grilled to juicy perfection. Serve with your favorite sides for a complete meal.


Ingredients

Marinade:

  • 1.5 lbs beef sirloin, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 1 red bell pepper, cut into 1.5-inch pieces
  • 1 green bell pepper, cut into 1.5-inch pieces
  • 1 red onion, cut into wedges
  • Metal or soaked wooden skewers

Instructions

  1. Marinate the Beef: In a large bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add beef cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  2. Prepare the Grill: Preheat grill to medium-high heat.
  3. Assemble the Kabobs: Thread beef, bell peppers, and onion onto skewers, alternating pieces.
  4. Grill the Kabobs: Grill kabobs for 10–12 minutes, turning occasionally, until beef is cooked to desired doneness and vegetables are tender with charred edges.
  5. Rest and Serve: Let the kabobs rest for a few minutes before serving.

Notes

  • Serve with tzatziki sauce, warm pita bread, or over a bed of couscous or rice.
