Description

This Meatloaf Grilled Cheese Melt is a delicious twist on the classic grilled cheese sandwich, featuring savory sliced leftover meatloaf and melted cheddar cheese layered between buttery toasted bread. Perfect for a quick, comforting meal using leftovers.

Ingredients

Sandwich

  • 4 slices of bread (white, whole wheat, or your choice)
  • 8 oz leftover meatloaf, sliced about 1/2 inch thick
  • 4 slices cheddar cheese
  • 2 tbsp butter, softened

Optional

  • ketchup or BBQ sauce for spreading or dipping

Instructions

  1. Preheat Skillet: Preheat a skillet or griddle over medium heat to ensure even cooking and browning of the sandwich.
  2. Butter Bread: Butter one side of each bread slice evenly to achieve a golden, crispy texture once cooked.
  3. Assemble Base: Place two slices of bread butter-side down on the hot skillet as the sandwich base.
  4. Add Fillings: Layer each bread slice with sliced meatloaf followed by one or two slices of cheddar cheese for a gooey melt.
  5. Top Sandwich: Finish by placing the remaining bread slices on top, butter-side up, to prepare for grilling.
  6. Cook Sandwiches: Grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted, pressing gently with a spatula to meld the sandwich together.
  7. Serve: Remove from the skillet, allow to cool slightly, slice, and serve with optional ketchup or BBQ sauce for dipping.

Notes

  • Use leftover meatloaf or freshly cooked meatloaf slices for best results.
  • Adjust the amount of cheese based on preference for cheesiness.
  • Butter the bread slices well to achieve a crispy golden crust.
  • Serve immediately while cheese is warm and melted.
  • Can be customized with different cheeses or sauces for extra flavor.
