Description

These Meatball Subs with Cheese and Garlic Butter are a delicious and comforting American-Italian classic. Juicy baked meatballs simmered in marinara sauce are layered inside toasted sub rolls brushed with flavorful garlic butter, then topped with melted mozzarella cheese for a cheesy, savory sandwich perfect for an easy dinner or game day treat.

Ingredients

For the Meatballs

  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic, minced (divided)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sauce and Assembly

  • 2 cups marinara sauce
  • 4 sub rolls or hoagie rolls
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped parsley
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat and Prepare Meatballs: Preheat your oven to 375°F (190°C). In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, 1 clove minced garlic, Italian seasoning, salt, and black pepper until just mixed. Form the mixture into 12 small meatballs and place them on a baking sheet.
  2. Bake Meatballs: Bake the meatballs in the preheated oven for 15 to 18 minutes until they are cooked through and no longer pink inside.
  3. Heat Marinara and Simmer Meatballs: While meatballs bake, warm marinara sauce in a medium saucepan over medium heat. Once meatballs are done, add them to the sauce and simmer for 5 minutes to absorb flavors.
  4. Make Garlic Butter: In a small bowl, melt the unsalted butter and stir in the remaining minced garlic clove, garlic powder, and chopped parsley to create garlic butter.
  5. Prepare Rolls: Slice the sub rolls lengthwise and brush the insides with the garlic butter mixture. Place them cut-side up on a baking sheet and toast in the oven for 3 to 5 minutes until lightly browned.
  6. Assemble and Bake Subs: Fill each toasted roll with 3 meatballs, spoon marinara sauce over the meatballs, and generously sprinkle with shredded mozzarella cheese. Return the assembled subs to the oven for 5 to 7 minutes until the cheese is melted and bubbly.
  7. Serve: Remove from oven and serve the meatball subs warm for the best taste and texture.

Notes

  • Frozen meatballs can be used as a convenient shortcut – just heat them thoroughly before assembling.
  • Add red pepper flakes to marinara sauce if you prefer a spicy kick.
  • Swap mozzarella with provolone cheese for a different cheesy flavor profile.
