Ingredients
For the Meatballs
- 1 pound ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 clove garlic, minced (divided)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Sauce and Assembly
- 2 cups marinara sauce
- 4 sub rolls or hoagie rolls
- 2 tablespoons unsalted butter
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped parsley
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Preheat and Prepare Meatballs: Preheat your oven to 375°F (190°C). In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, 1 clove minced garlic, Italian seasoning, salt, and black pepper until just mixed. Form the mixture into 12 small meatballs and place them on a baking sheet.
- Bake Meatballs: Bake the meatballs in the preheated oven for 15 to 18 minutes until they are cooked through and no longer pink inside.
- Heat Marinara and Simmer Meatballs: While meatballs bake, warm marinara sauce in a medium saucepan over medium heat. Once meatballs are done, add them to the sauce and simmer for 5 minutes to absorb flavors.
- Make Garlic Butter: In a small bowl, melt the unsalted butter and stir in the remaining minced garlic clove, garlic powder, and chopped parsley to create garlic butter.
- Prepare Rolls: Slice the sub rolls lengthwise and brush the insides with the garlic butter mixture. Place them cut-side up on a baking sheet and toast in the oven for 3 to 5 minutes until lightly browned.
- Assemble and Bake Subs: Fill each toasted roll with 3 meatballs, spoon marinara sauce over the meatballs, and generously sprinkle with shredded mozzarella cheese. Return the assembled subs to the oven for 5 to 7 minutes until the cheese is melted and bubbly.
- Serve: Remove from oven and serve the meatball subs warm for the best taste and texture.
Notes
- Frozen meatballs can be used as a convenient shortcut – just heat them thoroughly before assembling.
- Add red pepper flakes to marinara sauce if you prefer a spicy kick.
- Swap mozzarella with provolone cheese for a different cheesy flavor profile.
