- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare Ingredients: Prepare the Italian meatballs and mashed potatoes according to their respective recipes linked in the Notes section. Ensure both are fully cooked and ready for assembly.
- Assemble Casserole: Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch casserole dish with cooking spray. Spread the mashed potatoes evenly across the bottom of the dish. Arrange the prepared meatballs evenly on top of the mashed potatoes layer.
- Bake Meatballs and Potatoes: Place the casserole dish in the preheated oven and bake for 20 minutes, or until the meatballs and mashed potatoes are heated through evenly.
- Add Cheese and Continue Baking: Remove the casserole from the oven and sprinkle 2 cups of shredded mozzarella cheese evenly over the meatballs. Return the dish to the oven and bake for an additional 10 minutes, or until the cheese has melted and is bubbly and slightly golden.
- Garnish and Serve: Once baked, remove the casserole from the oven and sprinkle with 2 tablespoons of freshly chopped parsley. Serve the casserole warm for a comforting and hearty meal.
