Ingredients
For the maple muffins:
- 1 cup all-purpose flour
- 1 tablespoon cornmeal
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup buttermilk
- 1 large egg
- 1 tablespoon maple syrup
- 1 tablespoon melted butter
- nonstick spray or butter for greasing
For the sandwich filling:
- 4 breakfast sausage patties
- 4 large eggs
- 4 slices American cheese
- maple syrup for drizzling (optional)
Instructions
- Preheat and Prep: Preheat a nonstick skillet and grease English muffin rings.
- Mix Dry and Wet Ingredients: Combine dry and wet ingredients separately, then mix together.
- Cook Muffins: Fill rings with batter, cook, and flip until done.
- Cook Fillings: Cook sausage patties and eggs.
