Description

Mayak Eggs are a Korean-inspired marinated egg recipe featuring jammy boiled eggs steeped in a flavorful soy-based marinade. This easy-to-make side dish offers a perfect balance of savory, sweet, and umami flavors, enhanced by garlic, sesame oil, and a touch of heat. Ideal for serving over rice or noodles, or enjoying as a protein-rich snack.

Ingredients

Eggs

  • 6 large eggs

Marinade

  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 green onion, finely chopped
  • 1 red chili or 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Boil the Eggs: Bring a pot of water to a boil over the stovetop. Gently lower in the 6 large eggs and boil for exactly 6–7 minutes to achieve jammy centers.
  2. Chill the Eggs: Immediately transfer the boiled eggs to an ice bath to stop the cooking process and let them cool for 5–10 minutes.
  3. Peel the Eggs: Carefully peel the cooled eggs and set them aside, being cautious to keep the whites intact for better marinade absorption.
  4. Prepare the Marinade: In a medium bowl or container, whisk together 1/2 cup soy sauce, 1/2 cup water, 2 tablespoons rice vinegar, 1 tablespoon honey, 1 tablespoon sesame oil, minced garlic, finely chopped green onion, optional red chili or red pepper flakes, and 1 tablespoon toasted sesame seeds until well combined.
  5. Marinate the Eggs: Place the peeled eggs in the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 6 hours or overnight for best flavor development.
  6. Serve: Serve the marinated eggs chilled or at room temperature. They are excellent on their own, over rice bowls, noodles, or added to ramen dishes.

Notes

  • For a deeper and more intense flavor, marinate the eggs for up to 2 days.
  • You can reuse the marinade one more time by boiling and cooling it before reusing to ensure safety.
  • These eggs are versatile and work wonderfully as a snack or integrated into rice bowls and ramen soups.
