Ingredients
Main Ingredients:
- 2 cups leftover mashed potatoes
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped green onions
- Salt and pepper to taste
Optional Toppings:
- Nonstick cooking spray
- Optional bacon bits or sour cream for topping
Instructions
- Preheat and Prepare: Preheat the oven to 400°F (200°C) and lightly grease a 12-cup muffin tin with nonstick spray.
- Mix Ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan cheese, green onions, salt, and pepper until well mixed.
- Fill Muffin Cups: Spoon the mixture into the muffin cups, filling each about 3/4 full. Smooth the tops with a spoon.
