Mashed Potato Cheese Puffs:
- 2 cups cold mashed potatoes
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- Nonstick cooking spray
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) and grease a mini muffin tin or spray it with nonstick cooking spray.
- Mix Ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, chives, garlic powder, salt, pepper, and flour.
- Fill Muffin Tin: Spoon the mixture into the muffin tin, filling each cup to the top and pressing down lightly.
- Bake: Bake for 20-25 minutes until golden on top and crisp on the edges.
- Cool and Serve: Let cool in the pan for 5 minutes before removing. Serve warm.
