Description

These Mashed Potato Cheese Puffs are a delightful way to use up leftover mashed potatoes. With a crispy exterior and a cheesy, fluffy interior, these puffs make a perfect appetizer or snack.


Ingredients

Mashed Potato Cheese Puffs:

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • Nonstick cooking spray


Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and grease a mini muffin tin or spray it with nonstick cooking spray.
  2. Mix Ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, chives, garlic powder, salt, pepper, and flour.
  3. Fill Muffin Tin: Spoon the mixture into the muffin tin, filling each cup to the top and pressing down lightly.
  4. Bake: Bake for 20-25 minutes until golden on top and crisp on the edges.
