Description

Ingredients

Potato Mixture:

  • 3 pounds russet or Yukon gold potatoes, peeled and cut into chunks
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 4 slices cooked bacon, crumbled (optional)
  • Additional butter or cheese for topping (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Boil Potatoes: Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and return to the pot.
  3. Mash Potatoes: Mash the potatoes until smooth, then add cream cheese, sour cream, milk, butter, salt, pepper, and garlic powder. Mix until creamy.
  4. Add Cheese and Onions: Fold in half the cheddar cheese and green onions. Spread mixture in the baking dish.
  5. Top and Bake: Sprinkle with remaining cheese, green onions, and bacon if using. Bake for 20–25 minutes until golden. Rest for 5 minutes before serving.

Notes

  • Make ahead by assembling up to 2 days in advance and bake longer if cold.
