  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)

Seasonings:

  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 1/4 cup sun-dried tomatoes (chopped)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 cup small pasta (like ditalini or orzo)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Brown the Chicken: Heat olive oil and butter in a large pot, cook chicken pieces until browned. Set aside.
  2. Sauté Aromatics: Sauté onion until softened, then add garlic, red pepper flakes, Italian seasoning, salt, and pepper. Cook until fragrant.
  3. Add Ingredients: Stir in sun-dried tomatoes, chicken broth, and bring to a boil. Add pasta, simmer until tender.
