Ingredients
Chicken:
- 1 lb boneless, skinless chicken thighs or breasts
- 1 tbsp olive oil
Soup:
- 1 small yellow onion (diced)
- 3 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- ½ cup chopped sun-dried tomatoes (in oil, drained)
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes
- 1 cup baby spinach
- ½ cup freshly grated Parmesan cheese
- Salt and black pepper to taste
Garnish:
- Fresh basil leaves for garnish
Instructions
- Prepare Chicken: Heat olive oil in a large pot, sear chicken until cooked, then shred or chop.
- Sauté Aromatics: Sauté onion until translucent, add garlic and cook until fragrant.
- Add Ingredients: Pour in broth, cream, sun-dried tomatoes, seasonings. Simmer and add chicken back.
- Finish Soup: Stir in spinach, Parmesan, season with salt and pepper. Serve garnished with basil.
Notes
- For added richness, stir in a tablespoon of tomato paste with the garlic.
- You can also substitute kale for spinach, or add cooked orzo for extra heartiness.
