Description

Ingredients

Chicken:

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil

Soup:

  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes
  • 1 cup baby spinach
  • ½ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Garnish:

  • Fresh basil leaves for garnish

Instructions

  1. Prepare Chicken: Heat olive oil in a large pot, sear chicken until cooked, then shred or chop.
  2. Sauté Aromatics: Sauté onion until translucent, add garlic and cook until fragrant.
  3. Add Ingredients: Pour in broth, cream, sun-dried tomatoes, seasonings. Simmer and add chicken back.
  4. Finish Soup: Stir in spinach, Parmesan, season with salt and pepper. Serve garnished with basil.

Notes

  • For added richness, stir in a tablespoon of tomato paste with the garlic.
  • You can also substitute kale for spinach, or add cooked orzo for extra heartiness.
