- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup parmesan cheese, grated
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add them to the skillet and cook for 6-7 minutes on each side, or until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add diced onion and cook until soft, about 3-4 minutes.
- Add garlic and cook for another 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping up any bits from the bottom of the skillet.
- Stir in the heavy cream, sun-dried tomatoes, parmesan cheese, thyme, and basil. Simmer for 5 minutes, allowing the sauce to thicken.
- Return the chicken breasts to the skillet and coat them with the sauce. Cook for an additional 2-3 minutes, until heated through.
- Garnish with fresh parsley and serve.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Serve with pasta, rice, or vegetables for a complete meal.
- If you prefer a spicier version, add red pepper flakes to the sauce.
