  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/3 cup chopped sun-dried tomatoes (in oil, drained)
  • 1/4 cup chopped fresh basil (or 1 tablespoon dried basil)


Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides evenly with salt and black pepper to enhance flavor.
  2. Sear the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes on each side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté garlic: Lower the heat to medium and add the butter to the same skillet. Once the butter has melted, add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
  4. Make the sauce base: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer over medium heat.
  5. Add cheese and seasonings: Whisk in the grated Parmesan cheese, chili flakes if using, dried oregano, and dried thyme. Stir well, then add the chopped sun-dried tomatoes. Let the sauce simmer and thicken slightly for 2–3 minutes.
  6. Combine chicken and sauce: Return the seared chicken breasts to the skillet, spoon the sauce over them, and let everything simmer together for 3–5 minutes until heated through and the flavors meld.
  7. Garnish and serve: Sprinkle the fresh chopped basil over the dish just before serving. Serve the chicken hot with your choice of pasta, mashed potatoes, rice, or cauliflower mash.
