Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 3/4 cup chicken broth (low sodium)
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes (oil-packed), chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- Salt and black pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Slice chicken breasts horizontally to create thin cutlets. Pat dry, season with salt and pepper, and dredge lightly in flour.
- In a large skillet over medium-high heat, heat olive oil and butter. Sear chicken for 3–4 minutes per side until golden and cooked through. Remove to a plate and cover to keep warm.
- Add minced garlic to the skillet. Sauté for 30 seconds, then deglaze with chicken broth, scraping up browned bits.
- Reduce heat and stir in heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer until sauce thickens slightly.
- Return chicken and juices to skillet. Spoon sauce over chicken and simmer for 2–3 minutes until heated through. Taste and adjust seasoning.
- Garnish with fresh basil and serve hot with your favorite side.
