Ingredients
Chicken:
- 2 boneless, skinless chicken breasts, halved horizontally
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
Sauce:
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes (in oil), drained and chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- ½ teaspoon red pepper flakes
Others:
- 8 oz penne pasta, cooked al dente
- 1 tablespoon chopped fresh basil (optional)
Instructions
- Season the chicken: Season chicken breasts with salt, pepper, and Italian seasoning.
- Sear the chicken: Heat olive oil in a large skillet and cook chicken for 4–5 minutes on each side until golden and cooked through. Set aside.
- Prepare the sauce: In the same skillet, sauté garlic, add sun-dried tomatoes, pour in cream and broth. Stir in Parmesan cheese and red pepper flakes, simmer until thickened.
- Combine ingredients: Slice cooked chicken, add to the sauce along with cooked penne. Toss to coat and heat through.
- Serve: Garnish with fresh basil if desired and serve warm.
