Ingredients

Chicken:

  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Sauce:

  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes (in oil), drained and chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes

Others:

  • 8 oz penne pasta, cooked al dente
  • 1 tablespoon chopped fresh basil (optional)

Instructions

  1. Season the chicken: Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Sear the chicken: Heat olive oil in a large skillet and cook chicken for 4–5 minutes on each side until golden and cooked through. Set aside.
  3. Prepare the sauce: In the same skillet, sauté garlic, add sun-dried tomatoes, pour in cream and broth. Stir in Parmesan cheese and red pepper flakes, simmer until thickened.
  4. Combine ingredients: Slice cooked chicken, add to the sauce along with cooked penne. Toss to coat and heat through.
