Description
Marry Me Chicken Orzo is a creamy, dreamy one-pot dinner featuring tender chicken, sun-dried tomatoes, and orzo in a luscious parmesan garlic sauce.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1/2 cup sun-dried tomatoes, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1/2 tsp red pepper flakes (optional)
- Fresh basil or parsley, chopped, for garnish
Instructions
- Pat chicken dry and season with salt, pepper, and half of the Italian seasoning. In a large skillet, heat olive oil over medium-high. Sear chicken for 4-5 minutes per side until golden; remove and set aside.
- Lower heat to medium, add garlic and sun-dried tomatoes to the pan, and sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and heavy cream, stirring to deglaze the pan. Add orzo and remaining Italian seasoning. Return chicken to the skillet, making sure it’s submerged. Simmer uncovered for 10-12 minutes, stirring occasionally.
- Turn off heat, stir in Parmesan until melted and sauce is creamy. Adjust seasoning and add red pepper flakes if desired. Garnish with fresh herbs.
- Serve directly from the skillet or plate individually, topped with more herbs and Parmesan.
