Description

This Marry Me Chicken Orzo is a creamy and flavorful one-pot meal that will win over hearts at the dinner table. Tender chicken cooked in a creamy tomato sauce with orzo pasta, seasoned to perfection.

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste

For the Orzo:

  • 1 cup orzo pasta
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Chicken: Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides. Remove and set aside.
  2. Make the Sauce: In the same skillet, melt butter. Add garlic and sauté until fragrant. Stir in chicken broth, heavy cream, Parmesan cheese, diced tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer.
  3. Cook the Orzo: Add orzo to the skillet and stir to combine. Nestle the chicken back into the skillet. Cover and simmer for about 15 minutes or until the orzo is cooked and the chicken is done.
  4. Serve: Garnish with chopped parsley before serving.

Notes

  • You can use bone-in chicken thighs for extra flavor.
  • Feel free to add your favorite vegetables like spinach or sun-dried tomatoes.
  • Adjust the red pepper flakes to suit your spice preference.
